    TENDERLOIN BEEF WELLINGTON[/align] Printed from COOKS.COM[/align] [hr] 4 individual portion size fillets tenderloin beef
    1 can liver pate
    1 clove garlic, cut before using
    1 c. finely chopped mushrooms
    Salt
    Pepper
    3 tbsp. butter
    1 tbsp. mixed herbs
    2 tbsp. brandy (optional)
    1 pkg. "puffed pastry" (Pepperidge Farm)
    1 beaten egg
    Wellington sauce (optional) Knorr's packaged[/align] Rub cut piece of garlic over beef, season with salt and pepper. Broil until medium rare and let cool. Do not over cook. Can be done ahead and refrigerated. Spread small amount of liver pate on each fillet, fry mushrooms and onions in butter. Add brandy and herbs, simmer 1 minute, let cool.Roll pastry thinly on floured board to size that will completely cover each piece of meat. Lay cooled meat in center. Spoon mushroom mixture over top. Brush pastry edges with water (to help seal). Fold pastry carefully over ends to seal.Decorate with leaves made from leftover pastry. Brush whole surface with beaten egg wash (to glaze). Bake until pastry is browned. Garnish with fresh parsley and serve each as an individual serving. (As an option, make Wellington Sauce, spoon over each.) Serves 4. ]]

    Just remember to sear the tenderloin, let cool before wrapping with the pastry.

    yes, yes.....thank you. I did pick up my pack of meet tenderloin today....will marinate until tomorrow dinner....geezweeeeeeeeeee, i just found out from my hubby that we were invited to a BD party tomorrow....ok, no problema! ....i'll let the meet marinate until sunday morning then broil it, let cool until dinner then bake with pastry sheet....I'll let you know how that turn out....

      Tender loin is a delicate cut of meat;

      do not over season it, or else the meat will be over powered by the spices.

          I will do two whole beef tenderloins today. Each will be wrapped, in whole, with puff pastry. Will be served at the table, individually cut to suite (one knuckle or two? width wise).

          This time, thanks to a special gift from a friend, I have some Oregon White Truffle; so I will slice the truffle on top the beef, then sealing in the aroma with the pastry; and yes, some duck liver pate' will glue the truffle to the beef.

          White asparagus shoots came yesterday; so chubby and so tender. So, steamed asparagus will share plate with Kentucky green beans.

          Got a whole 12lbs Alaska halibut yesterday. It looks and feels so good. No wonder halibut is called the "steak of the Pacific". Will cook the fish simply with salt & pepper in a high heat oven; then baste it with chive-butter. Of course, will also serve the fish in whole, at the table, with portion suitable to the eater. (most of them are old; so I must do this way).

          Desert will be chocolate cake; fresh raspberry + full cream ice cream.

          I am so happy with the ingredients for this dinner.

                              Whyshould my family and I wait in line onthis special occasion???....They wanted to take me out but I refuse twice today, lunch and dinner !!!!..........cooking for my love one is what I want to do not just today but everyday....and they love it, and my hubby told me sealled with a kiss that to him everyday is mother's day.
